This week I’ve been trying to make better food choices and whipped up a delicious snack that I will be eating again. They take a little bit of time to make but so much better than just grabbing a bag of chips. They are very flavorful and was a good filler until lunch.
- Apple of your choice
- Peanut butter (or almond butter would work too!)
- Peanuts of your choice (I used cashews)
First you want to rinse your apple and then slice it into whatever thickness you desire. I was able to get eight slices out of mine but only used six as a base. Spread your butter of choice on each slice, I used peanut but I’ve heard that almond butter is delicious as well. With the last remaining slices of apple, I cut them into tiny diced pieces and sprinkled them over each apple slice. Chop up your nut of choice and sprinkle over each apple slice and bam! A delicious and filling snack.
Specific serving sizes is really up to you, I used 2 tbsp. of peanut butter total and about an 1/8 cup of nuts total. You can use more or less depending on your preference. Give these a try, you’ll enjoy them! It also makes for a fun snack for kiddos to help make!

So many exciting things have occurred in just the last few months. One new journey I’ve committed to is being a distributor for Young Living Essential Oils. For awhile now I have been looking into essential oils and pinning things pertaining to them on Pinterest. I even was in conversation with a doTERRA representative but until recently, I was just interested and not involved.
I attended a class a few weeks ago and absolutely fell in love with the idea of using all natural oils to assist in everyday living. There is so much more to essential oils than I ever imagined and I have so much to learn. At this class I was introduced to the Young Living everyday oils, ways to use them, the benefits of essential oils and the impact it can have on my life, and heard testimonials from other users. I made a couple trips to our local Hobby Lobby store this weekend and have so much to be a happy crafter about.. new washi tape, tab puncher, scrapbook paper, and stamps. I have seen people making their own Bible tabs and instead of purchasing a set on Etsy, I wanted to try and make my own. I haven’t started but I have stocked up on what I need to begin!
My obsession with washi tape is pretty obvious, although isn’t everyone? Okay, maybe it’s just me but how can you resist the tiny little prints that bring so much life to your planners and Bibles. Oh!! Side note, I purchased a new life planner by Erin Condren. I cannot wait for it to arrive, it’ll be my first EC planner and I will definitely be posting about that in the future. Back on track, my new stamps. Oh em gee, so cute! I purchased six new stamps because they were on sale for 50% off, we all know how expensive stamps can be. All of the ones I purchased dealt with photography in some way except for one, my mason jar. Totally precious!

So I have a few confessions to make.. (1.) I did not complete the Monday through Friday 4-week workout that I started last month, (2.) I have only completed 3 days of my 30-day yoga challenge, (3.) I ordered a new journaling Bible because I wasn’t happy with my latest entry which included my first (and probably last) attempt using watercolors. What a downer way to start this post huh? Hey, I’m human.
It would be negative if I allowed those setbacks to keep me down. Instead, I choose to allow them to motivate me for a different journey style. One that I am almost positive I’ll be successful in, because I’m being held accountable. So, May has arrived and beginning tomorrow I will be a part of a group workout three days a week. The other two weekdays I’ll be going to my gym for some cardio. On top of this new commitment, I vow to eat the way I should because who wants to work their tail off only to destroy it with bad food choices, not me. That’s why I am where I am today, bad food choices. So, remember me tomorrow as I’m sure I’ll feel like death after my first session. If you want to say a little prayer for my strength then I’ll gladly accept it.
Onto my third confession, one that is quite embarrassing but hey, I want to be completely real with you. I have always been my worst critic which is a flaw but something that I am constantly working on. With that said, this definitely falls into the “working on it” piece. I attempted to use watercolors in my journaling Bible for the first time and like I said earlier, it might be the last. I was highly disappointed with my “creation” regarding the Creation. I honestly haven’t journaled again since. Yes, I do understand that the point of my Bible journaling isn’t to make perfect artwork but to connect with Scripture, I just really was disappointed in myself and took it harder than I should. What did I do? I ordered another ESV Single Column Journaling Bible. I should’ve just prayed over the situation and continued on my way but I didn’t. So now, I have two. I plan on giving one to my daughter and let her start Bible journaling as well. It’ll be something that I hope can deepen her relationship in Christ and give us yet something else to connect and do together. Hoping positivity can come out of my previous not so positive attitude.
Have you had any recent setbacks? We all are human and make mistakes. Best way to overcome them is to accept them and move on. If we dwell on them, they take residence and in turn will reek havoc on our lives. I allowed myself to be vulnerable to my recent setbacks so hopefully if you’re going through something similar, you know it’s okay. You aren’t alone and it happens to all of us. Get back up and find positivity!
